  • 2 cups cooked rice (preferably chilled)
  • 1 tablespoon oil (vegetable, sesame, or olive oil)
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • Green onions, chopped, for garnish
  • Sesame seeds, for garnish.


  • In a large bowl, break up any clumps in the chilled rice.
  • Heat the oil in a skillet over medium heat. Add the mixed vegetables and cook until they start to soften, about 3-5 minutes.
  • Push the vegetables to one side of the skillet and pour the beaten eggs onto the other side. 
  • Scramble the eggs until cooked through, then mix them with the vegetables.
